Feta Parmesan Chicken with Pasta
Ingredients
2 Boneless/Skinless Chicken Breasts
Original Recipe Chicken Breader or another breading/coating
1 egg
Water
Olive Oil
2-4 Fresh chopped Plum Tomatoes
4 oz. container of Crumbled Feta Cheese
5 oz. bag of Artisan Parmesan Cheese
1 jar of Large Black Olives drained
10. Bowtie Pasta or Fettuccini boiled in water to taste with a splash of olive oil
Directions
Bread chicken breasts using chicken coating, water, and egg.
Pan Fry in olive oil until chicken is cooked through and meat is white.
Remove cooked chicken breasts and set to side.
In the same pan you fried the chicken. Add a splash of water, chopped tomatoes, 2 splashes of olive oil and black olives.
Put lid on pan and allow tomatoes and olives to simmer, 5-10 minutes. Depending on preference for firmness.
While tomatoes and olives are simmering slice the cooked chicken breast in pieces.
Add Feta and Parmesan Cheeses to the tomatoes and olives. Stir every few minutes on low heat until cheeses begin to melt.
Add the sliced chicken breast and stir a couple more minutes.
Serve hot over cooked pasta.
